A Star Wars cake for a five year old
Look what I got to make! This two-tiered lemon and funfetti cake was made for a young Jedi who wanted to make sure his special day was full of light sabres. I was most happy to oblige!

A Frozen Gluten-free Cupcake Cake with Aquafaba Buttercream
This Frozen cupcake cake was a special order for a 3yr. old girl who needed a birthday cake that was gluten-free as well as dairy-free. Gluten-free baked items can sometimes be very disappointing in flavour but these chocolate cupcakes were wonderfully moist and rich.
To compliment the cake flavour I wanted to make sure that I had an excellent buttercream but many dairy-free icings have a horrible mouth-feel thanks to shortening. However, thanks to a friend, I was introduced to the amazingness of aquafaba. Aquafaba is the liquid you usually discard in a can of chickpeas. People have recently discovered that you can use that liquid as a direct substitute for egg whites. Crazy! So I started searching and found an Aquafaba Swiss Meringue Buttercream recipe. After some adapting I made this amazing decorators icing that looks just like traditional buttercream without any horrible shortening feel to it. You can't know how thrilled I am with this!
Turns out that my customer felt the same way and she told me that these were the best gluten-free cupcakes she has ever had. How cool is that!

Shrek family cake in a mud bath for a 5yr. old
Today's cake was from a repeat customer who was looking for something special for her niece's 5th birthday party. The birthday girl wanted a Shrek theme and she wanted to make sure Princess Fiona was somewhere on the cake. I was a bit intimidated with idea of creating the likeness of Shrek and Fiona but the birthday girl decided I should be up for the challenge because the little ogre triplets were added to the order.
To make sure I could alter the faces easily to get the right likeness, I chose to create the family out of modelling chocolate. Yum! But....with this summer heat every time I tired to work on a figure, it would start to melt. Many breaks were taken. The remainder of the decorations were made from fondant and gumpaste.

Minecraft cake for a seven year old
Today's cake may look simple in design but there was quite a bit of work involved in this Minecraft cake. This cube cake was created with a dense chocolate cake and a Nutella buttercream filling. To ensure I was able to create solid and straight corners, I coated the cake with ganache. This is one rich cake.
I covered the cake with 1,215 fondant pieces to create the pixelated effect. Yup, simple but still quite a bit of work.

Fairy Garden Stump Cake for a seven year old.
Today's post is about a cake that I made for my niece. Right now fairy gardens are all the rage and I had previously seen that my niece had made one herself. With that it mind I created a fairy home out of cake and buttercream and handmade some cake toppers out of polymer clay. Polymer clay is a great medium to use to create one-of-a-kind custom toppers that are meant to be keepsakes like the bride and groom for a wedding cake. I had hoped that once all the cake was eaten my niece would be able to add these pieces to her already cute fairy garden.

TomCat in a top hat cake for an 11 yr old
Today's cake was for a repeat customer who was looking for a cake that would look like her daughter's cat. The client sent me a bunch of reference photos and in one of them they had placed a top hat on his furry head. Too cute! That's the one.
This one was made out of "Oh my God" vanilla pound cake, vanilla buttercream, fondant and sugar paste. This was a super fun cake to make. I wonder what she'll get me to do next year?

A pretty cake in brush embroidery
Today's cake was for my daughter who requested chocolate and vanilla cake with a raspberry cream filling and ganache. You bet.
The decoration was up to me so I made it so I could try out a couple different techniques. Inside was a checkerboard pattern that looks much more complicated to complete than it is and on the outside I did some brush embroidery which was so much fun to do. One pretty cake that was really fun to make. : )

Retro Rocket cake for a 1 yr. old
The latest cake was a delicious lemon cake with a vanilla buttercream and minimal fondant. This 2D cake was made for a one-year old but was primarily meant to be enjoyed by the adults at the party.
Simple in design, this cake was such a joy to work on. As an added bonus I got to try out one of the photographic backdrops I made to document it.
